Vegetarian risotto with asparagus, carrot, mushroom and cheese
Falafel pie. By the vegan stoner
So, I tried the fafafel pie on the blog called the vegan stoner. Love the illustrations. I added some avocado and made my own hummus with red peppers added.
The cucumber was watery and made the sauce runny -- it was all delicious.
Easy. Mix falafel mix with water, bake for 15 mins at 350 in the bottom of an 8x8 pan. Let cool. Layer some hummus on top. Cut up 1/2 a cuke and some tomato (added avocado here) layer on. Make tzatziki sauce with other 1/2 of cuke, yogurt (soy) and tsp lemon juice. Drizzle that on. And viola. Dinner.

Digestion back on track. Check.
It seems like I'm never hungry. I don't know if my stomach shrank or just solid food just seems to be staying in there longer than juice did. Yesterday's meals
Egg on whole grain toast with avocado
Lunch was soup. (Butternut squash, sweet potato, leeks and carrots). Pumpkin seeds on top.
And for dinner "lasagne". It was polenta, vegan cheese sauce with kale and portobello mushrooms and topped with marinara and "cheese".

Coming close to the end
I'm planning out my first few meals. Definitely vegetarian (to start). Soups then stuff that's easily digested then on to other foods. We've decided to commit to eating out only once a month. That will be huge for us. Thanksgiving comes up then Christmas. Both challenging as we are with family. I've compiles a massive collection of recipes and I'll be going through them over the next few months.
